Cold Storage


These are the cold areas where the ideal air is created with the help of the cooling devices of the space, which is isolated from external conditions in order to preserve the freshness of the foods needed and to extend the shelf life.

The main purpose of the cold storage is to maintain the freshness of the product like the first day without spoiling its appearance and internal structure for a long time.


  • HOW MANY DIFFERENT TEMPERATURE RANGES ARE THERE IN COLD STORAGE?
There are generally 4 different temperature ranges in cold storage.

Ambient Cooling: + 12 ° C / + 16 ° C

It is generally preferred in product processing, packaging and shipping department.These areas must also be cooled so that the ring of the cold chain will not be damaged.It is important to pay attention that the sound and air flow of the selected internal cooling unit should not affect the staff comfort, because the staff works in these units.



Cold Storage: -5 ° C / + 8 ° C

It is the most commonly used temperature range in cold rooms. Fresh Fruit and Vegetables, Fresh Meat and Chicken Products, Milk and Dairy Products, Fresh Seafood, Bakery Products and Medicinal Medicines are preserved at these operating temperatures.


Frozen Storage : -18 ° C / -25 ° C

Food which are shocked at -40 °C should be stored in the Frozen storages after the shock process. At these operating temperatures, Ice Cream, Frozen Fruits, Vegetables, Meat, Chicken, Fish Products and Frozen Bakery Products are preserved. These frozen storages become more common as the variety of frozen food has increased in recent years. It should be noted that the cooling load should be calculated properly, so that frozen products do not thaw.




Blast (Shock) Room: -35 ° C / -40 ° C

It is the process of decreasing the core temperature of foods to be kept for a long time at -18 °C. After the core temperature of the product reaches -18 °C, Products must be moved to the Frozen Storages. Shock rooms at -40 °C should not be used for storage. The important thing to consider in these rooms is the cooling device selection. While selecting the cooling device, the type of the products, quantity, entrance temperature, room dimensions and targeted shock time of the product are considered. Shocking time should be kept short so that the shelf life of the food could be longer.




  • HOW TO MAKE PRACTICAL COLD STORAGE COOLING LOAD ACCOUNT ?
The volume of the room (m3) is calculated by multiplying the Width x Length x Height dimensions of the place to be built in the Cold Room. For the desired operating temperature according to this volume, the cooling load of the room is calculated from the following technical account sheet. Appropriate device selection is made according to this cooling load.




  • HOW TO MAKE A COLD STORAGE ?
First of all, architectural layout and team projects are drawn according to the type of the product to be kept and the targeted storage capacity. Later, after the roofing process of the construction, whose foundation and steel construction or concrete prefabrication is completed, installation of the Cold Storage Wall and Ceiling Panels is done. After installing the panels, floor insulation is laid and ground concrete with mesh steel is poured.

After the above operations, Cold Room Doors are assembled and installed. Finally, after the cooling device is installed and commissioned, it is adjusted to the desired temperature and delivered.

  • COLD STORAGE PRICES AND COST CALCULATION
While calculating the Cold Room cost, calculations are made according to the criteria explained in detail below. These are as follows;

1)Type of Product to be Stored (Fruits, Vegetables, Meat, Dairy Products, Frozen Products etc.)
2)Amount to be Stored (500 Tons, 1.000 Tons, 2.000 Tons, 5.000 Tons etc.)
3)Location and Climate Conditions of the Facility

  • HOW SHOULD BE THE COLD STORAGE PROJECT ?
A good and useful Cold Storage is possible with a well-designed project. The first information we will set out in cold storage projects is the type of product and the amount of storage. These basic two pieces of information are very important. Then, the storage area is determined according to the storage amounts are given.

For example, for 1.000 Ton Apple Project;
Storage Temperature: 0 ° C
The apple is calculated to be approximately 200 kg in a 1 m³ volume.
We will need a volume of approximately 5,000 m³ for 1,000 tons of apple storage.
When we put the apple crates 6 in a row and 3 pallets, the height will be 600 cm. If we calculate 100 cm ventilation space for top evaporator fans, the inner net height should be minimum 700 cm.

An area of ​​5.000 m³ ÷ 7 m height = 715 m² is needed.
Since it will be a large warehouse of 715 m² alone, we design a warehouse of 120 m² x 6 equal capacity for its usefulness.
